Condemning Maduro's "usurpation" of power, he pledges to form a transitional government and hold free elections. |
Tonight's dinner: Onion tarte tatin Posted: 03 Feb 2019 10:00 PM PST Some ingredients are the cornerstone of everything you cook. Those few things you always have knocking about, which you can make dinner from in minutes. For me, they are pasta, garlic and onions. If I go to the cupboard and find any of them missing or even slightly low in stock I feel a bit panicky. Because when the fridge is bare and even the thought of going to the corner shop seems out of the question, the three of them alone will give you the most satisfying bowl of food. The other thing I love about that dish is that it puts onions (so often the base of what we cook rather than the star) front and centre. They punch above their weight, onions. All they need is a little salt, fat and acid and they are just one of the most deliciously sweet and savoury things you can eat. This tart makes great use of a couple of onions, a slosh of vinegar, and a bit of shop bought pastry. It looks impressive but it couldn't be simpler. Serve it with some crumbly goats cheese, good bread and a mustardy salad. SERVES 5 INGREDIENTS 2 large or 4 small onions 100g butter Olive oil 1 tbsp rosemary 50ml balsamic vinegar 50ml sherry vinegar or red wine vinegar 1 tbsp caster sugar 320g pre rolled puff pastry (roughly cut into a circle) Serve with goats cheese and mustardy salad Credit: Eleanor Steafel METHOD Preheat the oven to 200C/gas 6. Slice each onion in half from root to tip and peel off the skin. Cut each half into three wedges and trim off the root. Melt the butter in a heavy frying pan (the kind that can go in the oven) over a medium heat along with a glug of olive oil. Add the onions and a pinch of salt and fry for ten minutes, turning each wedge carefully every now and again. Arrange the onion wedges so that they fill the pan in a rough spiral. Add the rosemary and put the pan in the oven. Cook for another ten minutes so the onions get really soft and start to brown. Take the pan out of the oven and sprinkle over the sugar, and then the vinegar. Let it bubble up and shake the pan a little to coat the onions in the sugar and vinegar. Cook for about three minutes so the vinegar can reduce a bit. Take the pastry and lay it over the pan, tucking in the edges. Don't worry about getting it neat as it'll puff up around the onions. Put the pan in the oven and leave for about 20 minutes, or until the pastry is golden and puffy. Leave to cool and set a little in the pan for about five minutes, then run a knife around the edge of the pan and flip the tart out onto a large plate. Serve with crumbly goats cheese and a mustardy salad. |
